I had brought up in the SSBU Alts page that were using the spelling "Colour" instead of "Color". When I pointed it out, it would have appeared the reasoning why it was change was because Smash used "grey" instead of "gray". Because it was already consistent the way it was before, someone reverted it back to the American spelling. Looking at Manual of Style, there seems to be no preference as long as it is consistent in the article. I ask this as I see a 62 other pages using "Colour" when searching the spelling on the Wiki.
