:::For column sorting, you could easily have the default arrangement and then assign sort-keys that are more aligned with the target sort (in this case series, possibly use numbers). Sorting would then do it by series order (or however it is setup), pressing the sort button again would do reverse series order, and once more back to default. As for the grid tables... not without some funky CSS or JS, either of which would need to be done by admins, but it would still be a headache for whomever does it.
